Some days I am just at a complete loss for what to cook. If I was just cooking for myself, I think I would happy eating salad or arepa con aguacate ever day. But my partner doesn’t have such simple tastes. And, well, variety is the spice of life right?

I put my thinking cap on and decided to combine one of my favourite breakfasts, French toast, with a lunchtime staple, sandwiches. And thus, the French toast sandwich was created.

Ingredients

  • 8 slices of your favourite bread – I used corn flour bread
  • 4 eggs
  • Lettuce or rocket
  • 1 large tomato
  • Mustard
  • 4 slices of cheddar cheese
  • Your fave chutney, I think a capsicum relish would work well!

Directions

  1. Crack your four eggs into a shallow bowl and beat them until mixed well. 
  2. Get your non-stick pan ready and put it over a medium-high head.
  3. Dunk your sliced bread into the egg mixture and then lay them into the pan. Depending on the size of your pan, you might only want to toast them two or three at a time. you don’t want them to stick together.
  4. Once the bread is golden brown on one side, and the egg is cooked through, it’s time to flip it over.
  5. Cook the rest of your pieces of bread and set them aside.
  6. Spread your mustard and your relish over half the slices and then top with lettuce, tomato, cheese and whatever other topping you life. Add salt and pepper to taste if you like and then top with the other slices of bread. There you have it! A delicious treat for lunch. Enjoy.
