one egg breakfast burrito recipe

When I woke up to find one lone egg in the carton this morning, was I defeated? Did I hop into the shower, get dressed and make my way to the supermarket to stock up on breakfast food? Of course not. I considered it a personal challenge – to make the best damned one-egg burritos I possibly could.

I rummaged through the fridge, rounded up whatever ingredients to make this bad boy. And it was pretty fantastic. You’re welcome.

{ The One Egg Breakfast Burrito }

Serves 2

  • 1 egg
  • Dash of milk
  • 1 carrot
  • 1 avocado
  • Butter
  • 1/2 tin of tomatoes
  • Cumin
  • Curry powder
  • Tortillas

Directions:

  1. Melt butter in a pan. Add half tin of tomatoes and simmer.
  2. Chop up the carrot and add that to the pan too. Sprinkle half a teaspoon of cumin and half a teaspoon of curry powder to the mix and allow to reduce.
  3. In a bowl, whip egg with dash of milk and add to pan once carrot is cooked – don’t cook them too much, make sure they’re still crunchy.
  4. Once the egg mixture looks reasonably edible, not a liquidy mess, it’s ready.
  5. Toast your tortillas, cut up the avocado and you’re done.
  6. Make yourself a tea, and a couple of arepas if you so desire (and you know I do), and breakfast is served. Mission accomplished!
